
Muzaffarpur/ Varanasi : A high-level research team led by Prof. Dinesh Chandra Rai, a leading food scientist, senior professor at BHU, and currently the Vice-Chancellor of BR Ambedkar Bihar University (BRABU), has published a review paper in the prestigious Elsevier journal Food Nutrition. This significant academic contribution, explores the processing, nutritional profiles, and health implications of plant-based milk alternatives, positioning them as sustainable solutions for India's evolving dietary landscape.
The study features collaboration among experts from across the country. Ashok Kumar Yadav and Nanam Ronya are from Rajiv Gandhi University, Arunachal Pradesh. Aman Rathaur and Himanshu Trivedi from the School of Advanced Agriculture Sciences and Technology, Chhatrapati Shahu Ji Maharaj University, Kanpur , Prof. Rai and Vikas Patel are from the Department of Dairy Science and Food Technology, Institute of Agricultural Sciences, Banaras Hindu University.
Commenting on the scope and impact of the research, Prof. Dinesh Chandra Rai stated: "Our comprehensive research meticulously evaluates milk alternatives derived from oats, almonds, soy, coconut, and hemp, comparing their functional properties with traditional bovine milk. While these plant-derived options often differ in protein concentration, they provide superior dietary fiber and essential bioactive compounds such as phytosterols, isoflavones, and omega-3 fatty acids, which offer proven antioxidant and cardioprotective benefits. Prof Rai added : by analyzing advanced processing techniques like enzymatic hydrolysis and strategic fortification, we have provided a clear roadmap for food manufacturers to develop shelf-stable, sensorially appealing products that cater specifically to India’s large lactose-intolerant population."
VC Prof. Rai further emphasized the broader vision of the study, noting: "Beyond individual health, this research underscores the socio-economic and environmental advantages of diversifying the dairy sector. Plant-based production carries a significantly lower carbon and water footprint, aligning with global sustainability goals. Furthermore, states like Bihar can leverage local crops such as millets and maize to drive rural entrepreneurship and agricultural value addition. These alternatives are not mere replacements but complementary solutions that address public health needs while protecting the planet."
